  • 1 tablesp. Butter.
  • Pinch salt.
  • 3/4 cup caster sugar
  • 2 tablesp. Flour
  • Juice of 1 lemon
  • 2 eggs
  • 1 tea cup milk

Preheat oven: 190c

  • Cream  together butter, salt and sugar until light.
  • Add flour, lemon juice and mix well.
  • Beat egg yolks and add with milk stirring in gradually.
  • Fold in stiffly beaten egg whites.
  • Pour into pie dish and stand in roasting pan with a little cold water.
  • Bake at  190 C  for  1 hr.
