Muffin mix:

  • 3 cups   (750 ml)    Flour
  • 3 teasp. ( 15 ml)     B/powder.
  • 1 cup    ( 250 ml     Brown sugar.
  • 2 eggs   lightly beaten.
  • 1 1/2      ( 375 ml )  milk.
  • 3/4 cup  oil.
  • 2 teasp  ( 10 ml) ground cinnamon.
  • 1 cup    (250 ml) finely chopped apple.

Topping:

  • 1/4 cup  ( 62,5 ml) brown sugar.
  • 1/4 cup  ( 62,5 ml) flour.
  • 40g      butter chopped.
  • 1/4 cup  ( 62,5 ml) chopped walnuts.
  • 1/4 cup  (125 ml) finely chopped apples.

Preheat Oven: 180 C
Baking time: 20 min

Method:

  • Sift  flour , paking powder, cinnamon into bowl.
    Stir in brown sugar.
  • Combine egg, milk, oil.  Add to dry ingredients. Do not  over mix,
    batter should be slightly lumpy, stir in chopped apple.
  • Topping: combine sugar and rub in butter.
    Add nuts + mix.
  •  Place spoonfuls of batter into greased muffin pan,
    filling  holes 2/3 full. Sprinkle muffins with the extra apple and topping.
  •  Bake at 180 C for about 20 minutes, remove from pan cool on wire rack.
